          Did you all have fun with PESTO last month? It is amazing how versatile  pesto is. That is because it is more of a technique than a recipe. Now we go from the vibrant and colorful pesto to a more understated and subtle flavor of what is certainly not to be confused with plain:  VANILLA. Much like salt brings out the flavors of savory foods, vanilla enhances the flavors of sweet foods and, on occasion, savory foods as well. Yes vanilla, which makes our CHOCOLATE VOLCANO CAKE more chocolaty, enhances cakes, bread and butter pudding, any custard, and even enhances our wonderful rice-wine and shallot based vinaigrette. Yes it is true. Not to be confused with or compared to a piquant blue cheese dressing or chipotle ranch or even the wonderfully acidic balsamic vinaigrette, VANILLA VINAIGRETTE with it's steeped shallot and vanilla infused vinegar is the very subtle yet balanced backdrop that allows other ingredients to shine as well. At THE COBBLESTONE CAFÉ we feature an ORIGINAL VANILLA VINAIGRETTE that we pair with gorgonzola and candied pecans.
