           I trust you all had fun with last month's chocolate volcano!( if you missed it the recipe is still available on our website..www.aculinarycelebration.com. Now that March Madness is upon us, I would like to feature some traditional Irish fare, in celebration of St. Patrick's Day. My wife is urging me to share our recipe for pumpkinseed pesto, for after all it is GREEN, but I am sticking with one of our favorite winter time, warm you up, hearty treats that we call BRAISED LAMB SHANKS WITH ROSEMARY. I promised her and I promise you that we will visit the world of pesto, and its many different applications as summer approaches.

 

            Braising is a classic cooking technique that requires meat to first be browned in some kind of fat(butter, vegetable oil or olive oil) and then simmered with a small amount of liquid(usually stock and/or wine) for a long time. This is "Crock Pot" cooking, but you do not have to have a crock pot to pull it off. We use what is called a BRAISIER (I wonder how it got its name) which is simply a short stock pot with a tight fitting lid. It is critical that the pot be covered tightly so the liquid does not evaporate. This allows the braised food to "break down" and become tender. Other essential ingredients in braising are the aromatic herbs. When cooked for a few hours with the meat, the herbs will impart a gentle flavor into the vegetables and the meat. We get our fresh rosemary from our favorite Irish chef, Tommy Walsh, who grows an abundance in his own garden at home. If you cannot find any give him a call or track him down at St. Jude's Catholic Church in Tequesta.

  • The Average American eats only one half a pound of lamb per year compared to 56.5 pounds per capita in New Zealand.
  • Pomace olive oil is olive oil that is blended with vegetable oil thus raising its smoking point. Extra Virgin Olive Oil should be used for dressings or to drizzle on foods but not for sautéing.
  • Braised food, especially lamb shanks are perfectly complimented with your favorite mashed potatoes.
